Let’s just get this out in the open- Yes! Coconut oil is high in saturated fat! However, contrary to mainstream belief, saturated fats are not bad for you, they just have a bad rap. The consensus is that the sat fats are bad because they increase the LDL in blood (associated with cardiovascular diseases), but this is a bit of a misnomer and is what most of society has locked onto. In actuality, there are studies that show coconut oil increases beneficial HDL and lowers LDL!
Coconut oil used to be a staple in the United States, but due to a negative campaign against saturated fats in general, the versatile oil was abandoned for hydrogenated polyunsaturated oils that come from US’s main cash crops (like soy). And guess what! These contain trans fatty acids, the real culprit to poor health.
Another reason for coconut oil’s bad rap was that it was maimed. Yes, destroyed of it’s beneficial qualities by being refined and hydrogenated. By hydrogenating the oil, the amount of saturated fat present in the oil increases, and can produce trans fats. As for refined coconut oil, heated up to high temps it goes ‘bad’ and also produce trans fats.
