Strawberries & Cream


Cashews and vanilla blended and poured over juicy red strawberries make this a perfect summer breakfast or midday treat!

1/2 cup raw cashews (best if soaked 8 hours and rinsed, but not necessary)
1 tsp vanilla extract or raw ground vanilla
1 cup water
optional: add banana or 1 tsp luo han guo powder (aka monk fruit)

Blend all ingredients together on high until creamy and smooth.  Adjust water for thicker or soupier cream.  Will last in fridge for 3-4 days.

Pour over fresh strawberries and enjoy!
