
My household LOVES this recipe. What’s great about it is that it can be used on a wide variety of foods and is super forgiving with portions of ingredients. The only catch is to find some smoked chipotle peppers.
1 large red bell pepper
2 cloves of garlic (or more, or less!)
1 smoked chipotle pepper de-seeded (for a spicier version, leave seeds in)
3 dates (want sweeter? add more dates!)
1-3 tb balsamic vinegar
1 tb olive oil
1 tsp himalayan or sea salt
Blend all ingredients on high until smooth. Great as a sauce for zucchini cakes. Use as a BBQ sauce on chicken (I would probably use less oil too). Tasty as a salad dressing or to make kale chips with (add 1/2 cup of raw cashews for a creamier/heavier texture). The uses are endless! Let us know how you used it!
