Curry Rice

1 cup jasmine rice
1 1/2 cups water
1-3 tsp curry of your choice
1 cup chopped bok choy
1/2 cup chopped carrots
1/4-1/2 chopped yellow or white onions
1 can coconut milk

Prepare rice with 1 1/2 cups water instead of the usual 2 cups.  Mix coconut milk and curry while rice is cooking.  Just before rice is finished cooking add coconut-curry mix and let simmer for about 5 minutes or until rice has soaked up sauce. Quickly saute veggies and add to rice mixture.  Serve and enjoy!
