Cinnamon Log

rolling up cinnamon logIn an attempt to make some flour and sugar free cinnamon rolls, I came up with this recipe which uses dates and pecans as the base.  It even tastes better the next day!

2 cups raw pecans (250 g)
1 1/2 cups dates (~14 medjool dates)
lots of cinnamon

In a food processor, chop pecans into a course meal. Add dates a few at a time until thoroughly chopped and mixed with pecans.  Remove date-pecan mixture onto a cutting board or wax paper and flatten into a rectangle that is about a foot long.  Coat entire rectangle with cinnamon…lots of cinnamon.  Slowly roll into a log and cut into 1/2 inch slices.  Ready to serve!
