1 large cucumber, diced
1 bunch of kale, de-stemmed and broken into bite sized pieces
1 tb lemon juice
olive oil or mashed avocado
sea salt to taste
optional: diced tomatoes and/or bell pepper
Coat kale leaves with olive oil or avocado, lemon juice, and salt. If you massage the leaves with oil and lemon juice, it will cause the cell walls to break down faster and give them a cooked texture. Toss with diced cucumber and serve!
