Black Bean Sweet Potato Tacos

cilantro and limeThis is a great twist to a common dish, and a delicious way to eat your fiber.

Ingredients:
sweet potato, baked
black beans
cumin
olive oil or butter
sea or himalayan salt
corn tortillas
sour cream
cilantro, chopped
lime wedges

Procedure:

  1. Scoop out sweet potato, removing the skin.  Mash with butter or olive oil and salt to taste.
  2. Warm black beans with cumin.
  3. Fill warmed corn tortillas with black beans, sweet potato, cilantro, and sour cream.  Squeeze fresh lime on them.  Enjoy!
