2 -3 cucumbers thinly sliced (tip: use the large slicer on the cheese grater)
1/2 cup large red onion, finely diced
1-2 tb parsley, finely chopped
~ 1 tb olive oil
~ 2 tb unseasoned rice vinegar (no sugar added!)
squeeze of lemon juice
sea salt to taste
Toss all ingredients together in a bowl. Best if served after chilled in fridge for 30 minutes.
