Dino Kale with Tahini Sauce

kale with tahiniOne of my top tips for making greens enjoyable to eat is to smother them in your favorite dressing or sauce.  Here’s one of my favorites combined with dinosaur kale:


  • 1 bunch of dino kale
    1-2 garlic cloves
    ½ tsp sea salt
    ½ cup tahini
    ⅓ cup lemon juice
    ¼ cup olive oil
    ¼ cup date paste, honey, or agave nectar
    optional: ¼ cup water


  1. Cut off the stem ends of the kale.  Bring a pot of water to a boil.  Toss kale in water, turn off heat, let kale sit in hot water for ~10 seconds or until skin is soft.  Kale leaves should still be a bright green color.  Strain kale and chop into bite sized pieces.

  2. In a blender, blend all other ingredients until smooth.

  3. Toss tahini sauce with kale and serve!
