Lavender-Lemon Cookies

Grain-free and sugar-free

1 1/4 cup almond flour
1 tsp lavender, chopped finely
1 tb lemon zest
1/4 tsp baking soda
1/4 tsp sea salt
1/4 cup unrefined coconut oil
10 drops liquid stevia extract (I used Stevita)
1 tsp vanilla
1 egg

Combine all dry ingredients together. Whip egg with wet ingredients. Combine wet and dry.  Form little balls with dough, press and flatten on baking sheet. Bake in oven on 350 degrees F for 7-10 min. Makes about a dozen cookies.
