I cannot believe how often I hear people say, “I don’t like vegetables.” Upon further clarification, I come to find out why — they’ve associated eating vegetables with plain, unseasoned, steamed, boiled…. Ummm, excuse me!, but if I thought that’s how I had to eat vegetables, I’d turn my nose up at them too!
Season, smother, hide, mix in soups, pastas, casseroles — do whatever it takes to ENJOY them. I find that vegetables actually enhance my cuisines with their flavor, texture, and color. A life without vegetables is bland AND a life with unseasoned vegetables is also bland!
