Flour-free Banana Pankcakes

IMG_3875I think the taste of these pancakes are delicious – naturally sweet and totally satisfy the craving of morning cakes.  However, please note that if you are looking for a flour-free fluffy version, these are not those.

2 eggs
1 banana
1/2 cup almond flour or ground oats (grind up in blender)
1/4 cup coconunt oil or grass fed butter
1 tsp vanilla
optional: 1 tsp cinnamon

If you are using oats, place in a blender on process until fine like flour. Add rest of ingredients (I would suggest warming the oil or butter so that it is liquid, first) to blender and blend on low to medium until well mixed.

Heat pan to medium. Coat pan with coconut oil or other oil of choice (like butter!), and pour out enough batter to form pancakes. Cook as you would any other pancake. Flip when the bubbles appear!

Serves 2 people.
