Sugar-Free Fruit Cobbler

Cobbler Filling:
4 medium apples and/or pears, peaches…
1/2 cup soft dates, pitted
1/2 tsp. ground cinnamon
1 T lemon juice
1 tsp vanilla
1/4 tsp ground nutmeg
1/2 tsp sea salt
2 T raw honey (optional)

Cobbler Topping:
1 1/2 cups of any nut mix (pecans, Brazil nuts, cashews, or walnuts)*
3/4 soft dates, pitted
1/2 tsp sea salt

*pecans are the sweetest, Brazil nuts have the strongest flavor

 

Preparation for filling:
Preheat oven 325 degrees F if cooking cobbler.
Peel and core one of the apples/pears/peaches. Place it along with the dates, cinnamon, lemon juice, honey, vanilla, nutmeg and salt in a food processor or  high-speed blender. Puree until completely smooth and creamy. Set aside.
Peel, core and thinly slice remaining fruit.  Place slices in a large  bowl and toss with pureed mix. Place in a medium sized glass or ceramic dish.
If cooking fruit, place pie dish with tossed fruit in oven and bake covered for 30 minutes.

Preparation for Topping:
In a food processor pulse the nuts until finely ground then add the dates and sea salt and continue to grind until evenly mixed.
Crumble an even layer of the nut mixture over the fruit and serve.
Can warm in the oven at 200 F if desired.

This dish is delicious cooked, uncooked, warmed. However, texture-wise, most people prefer cooked/soft fruit.
